Bear grease biscuits

Tried my hand at bear grease biscuits for the first time and they turned out great. Used the meateater recipe…..a little tweaking and it will be even better. Very flaky!!!! Also very easy to make.

2 cups flour
2 1/2 tbsp of baking powder
1/2 tbsp of salt (less if your using salted butter)
1/3 stick of butter (cold) grated
1/3 cup of cold bear grease

Add the above ingredients to a bowl and use a patty cutter to work until it is clumpy…don’t overwork it.

3/4 cup milk (buttermilk would be a great substitute).

Use same pastry cutter to combine milk and make your dough. Again, don’t over work. Take doe from bowl and place on a flowered surface and flatten with your hands….maybe 3-4 inch thick. Fold and repeat 5-6 times. Cut biscuits and add to a pan for cooking.

I cooked mine in a cast iron pan that was pre-greased with bear grease.

475 degrees for 12-15 minutes or until done depending on thickness.

Im gonna try and mimic red lobster flavors and cheese using the same recipe. The consistency is exactly like red lobster biscuits.

These are really really good.
