Smoked Queso Dip

Was at a friends house last week in Arizona. I’ve wanted to make this dip for awhile now and thought I’d give it a try. It was a big hit. Everyone loved it

That’s cream of cheddar soup. Recipe called for cream of jalapeño, but I couldn’t find it. I thought there’s pounds of cheese already, what’s a little more. Meat is Chorizo sausage.
 
Just mix whatever you want until melted?
Yeah basically. I used sharp cheddar, pepper jack, cream cheese, velveeta, chorizo, pickled jalapeño, 2 cans Rotell and about 2-3 TBSP bbq rub. Smoked at 250-275F stirring occasionally.

I will say this is a big recipe as I used 12-16 oz of each cheese. Just one block of cream cheese. One pound of Chorizo. Good appetizer for about 15 people. We ate it for a few days. It’s good on lots of things. Stuffed mushroom caps with this was also very good Tostitos scoops work great to get lots of dip.
 
Man, that looks great! Will def be on my to-do list. My brother just made a big pan of smoked mac 'n cheese.
